Chef Amélie Laurent opened Maison Corail with a simple rule: nothing on the menu travels more than a hundred miles, except the butter. Six years later the rule still holds, and the result is the most quietly confident cooking on the coast.
The menu changes with the boats. On our last visit that meant spot prawns barely kissed by a binchotan grill, a Santa Barbara uni custard set under a sheet of dashi jelly, and a halibut course finished tableside in brown butter and capers. Desserts lean on the citrus groves inland; the Cara Cara tart is reason enough to come back.
“We cook for twenty people a night because that’s how many I can personally cook for.”Amélie Laurent, Chef & Owner
Why it’s in the Network
Plenty of restaurants in Orange County are expensive. Very few are this precise, this personal, and this consistent. Service is warm without hovering, the wine pairing favours small California growers over trophy labels, and the room, all limewashed plaster and coral linen, is the rare luxury space that feels relaxed.
Know before you go
Reservations open on the first of each month for the following month and are usually gone within a day. The counter seats at the pass are the best in the house. Jackets are not required, but you won’t feel overdressed in one.
